Yukimegami sake rice after an 18% polish
Byakko is an exceptionally rare junmai daiginjo with a stunning 18% polishing ratio
— a feat almost unheard of, where 50% is already excellent.
Too much polishing dulls the flavor, too little prevents refinement.
Each batch begins with 600kg of Yukimegami rice, the “King of Sake Rice,”
meticulously polished over 200 hours, using industrial diamond for a fine cut, to reveal its purest core.
